Ingredients
- 2 1/2 cups Cooked Chicken (we used 1 Rotisserie Chicken), shredded
- 1 Avocado, diced
- 1 can (15.5oz) Black Beans, drained, rinsed
- 1 can (15.25 oz) Corn, drained, rinsed
- 1 Red Bell Pepper, small diced
- 1/2 Red Onion (or 1 whole small), finely diced
- Southwest Dressing: --
- 1 cup Plain Orontes Yogurt
- 2 tbsp Lime Juice (2 limes)
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Honey
- 2 tbsp Cilantro, chopped
- 1/2 tsp Cumin / Chili Powder / Salt
- 1/4 tsp Garlic & Onion Powder / Smoked Paprika / Pepper
- Garnish: Cilantro
Method of Preparation
Step 1
In a bowl add all the ingredients of the dressing and whisk until combined. Set aside.
Step 2
In a large bowl add the cooked chicken and shred using two forks.
Step 3
To the bowl with the chicken add the avocado, black beans, corn, bell pepper, red onion, and dressing. Toss to combine.
Step 4
Serve with Dave's Tortilla Chips, wrapped in a tortilla, or eat right out of the bowl, enjoy!
