Ingredients
- 1 Avocado, diced
- 6 Persian Cucumbers, sliced
- 1/4 Red Onion, sliced thinly
- 1/4 cup Walnuts, rough chopped
- 1/4 cup Parmesan Cheese, grated
- 1 tbsp Fresh Dill, rough chopped
- 1 tbsp Fresh Chives, chopped finely
- Dressing: --
- 1/4 cup Mayonnaise
- 1/4 cup Plain Greek Yogurt
- 2 tbsp Rice Vinegar
- 1 tbsp Dijon Mustard
- 1 Garlic Clove, grated
- 1/4 tsp Salt & Pepper / Smoked Paprika / Oregano
Method of Preparation
Step 1
In a small bowl mix together the dressing ingredients.
Step 2
Slice the cucumbers and red onion, and roughly chop the walnuts, dill, and chives.
Step 3
In a deli container or mason jar or bowl - add all the salad ingredients.
Step 4
Pour the dressing over the salad ingredients.
Step 5
Mix or shake the salad gently together to coat well.
Enjoy this as an easy on-the-go lunch or super quick side dish.
