Ingredients

  • Avocado, diced
  • Persian Cucumbers, sliced
  • 1/4 Red Onion, sliced thinly
  • 1/4 cup Walnuts, rough chopped
  • 1/4 cup Parmesan Cheese, grated
  • 1 tbsp Fresh Dill, rough chopped
  • 1 tbsp Fresh Chives, chopped finely
  • Dressing: --
  • 1/4  cup Mayonnaise
  • 1/4 cup Plain Greek Yogurt
  • 2 tbsp Rice Vinegar
  • 1 tbsp Dijon Mustard
  • Garlic Clove, grated
  • 1/4 tsp Salt & Pepper / Smoked Paprika / Oregano

Method of Preparation

Step 1

In a small bowl mix together the dressing ingredients.

Slice the cucumbers and red onion, and roughly chop the walnuts, dill, and chives.

In a deli container or mason jar or bowl - add all the salad ingredients.

Pour the dressing over the salad ingredients.
