Ingredients
- 2 Acorn Squash
- 1 tbsp Olive Oil
- 1/2 tsp Salt
- Pinch Pepper
- 1/4 tsp Cinnamon
- 1/4 cup Honey
- 8 oz Goat Cheese
- 1/2 cup Cranberry Relish and/or Sauce
- 1/4 cup Honey Roasted Pistachios, rough chopped
- Garnish: Fresh Thyme / Honey
Method of Preparation
Step 1
Preheat the oven to 400°F. Spray a sheet pan with pan spray.
Step 2
Cut the acorn squash in half, lengthwise.
Scoop out all the seeds. Place the cut squash in the microwave for 6-8 minutes to soften the skin.
Step 3
Place the squash halves, cut side facing up, on the sheet pan.
Brush the halves with olive oil, sprinkle with spices, and drizzle with honey.
Roast squash for 30-35 minutes, or until tender.
Step 4
Fill the cavity of each acorn squash with 2oz of crumbled goat cheese.
Return to the oven and broil for 2-3 minutes.
Step 5
Garnish the top with cranberry sauce, honey roasted pistachios, drizzle of honey, and fresh thyme. Enjoy!
