Ingredients

  • Baking Potatoes, washed well, pricked with a fork
  • 1/2 cup Turkey Gravy
  • 1-2 cups Stuffing
  • 1-2  cups Sweet Potatoes, diced or mashed
  • 1-2 cup Turkey, diced or shredded
  • 1/4 cup Cranberry Sauce
  • 1-2 cups Mashed Potatoes
  • 1/4 cup Cheddar Cheese, shredded
  • Garnish: Crispy Fried Onions & Turkey Gravy

Method of Preparation

Step 1

Preheat the oven to 400°F.

 

Bake the potatoes for 45 minutes until tender.

Cut potatoes in half and scoop out the center carefully. Set potato halves in a casserole dish.

In a bowl gently mix together the stuffing, sweet potatoes, and turkey.

Assemble the potatoes:

  1. Layer of turkey gravy, about 1 tbsp
  2. Fill the potato skins generously with the turkey mixture
  3. Spread the cranberry sauce over the top of the meat mixture
  4. Top with mashed potatoes.

Cover and bake for 20 minutes.

Uncover and add cheddar cheese. Bake for 15-20 minutes until golden brown.
