Kale Street Corn Salad

Ingredients

  • 4 each Corn on the Cob
  • 1 bunch Kale, stems removed, rough chopped
  • 1/4 tsp Salt & Pepper
  • 1 tsp Chili Powder
  • 2 each Limes, juiced
  • 1 each Lime, zested
  • 1/2 cup Cotija Cheese
  • 1 each Red Onion, diced small
  • 1 each Avocado, diced
  • Cilantro Lime Dresing -- ---
  • 1/2 cup Greek Yogurt, Plain
  • 1/4 cup Mayonnaise
  • 1 each Lime, juiced
  • 1/4 cup Cilantro, chopped finely
  • 2 each Garlic Cloves, minced
  • 1/4 tsp Salt & Pepper
  • 1/2 tsp Smoked Paprika
  • Garnish: Cotija Cheese / Smoked Paprika

Method of Preparation

Step 1

Grill/Boil/Microwave the corn on the cob. Remove the kernels from the cob once cooked and set aside.

Step 2

In a bowl combine all the Cilantro Lime Dressing ingredients and mix to combine well. Set aside.

Step 3

In a large bowl add chopped kale, salt/pepper, chili powder, lime juice and zest.

 

Massage for about 3-5 minutes or until the leaves have softened. The amount of kale in the bowl will look half the size when done.

Step 4

Add in the remaining ingredients and lightly toss.

 

Add in the dressing and toss to combine well.

In a serving dish garnish the salad with cotija cheese and smoked paprika. Enjoy!
