Ingredients

  • 8 oz Bacon (8 slices), cut in half
  • 4 oz Stilton Cranberry Cheese
  • 2 oz Cranberries, Dried, chopped
  • 16 each Dates, sliced (NOT in half completely), pit removed
  • 3 tbsp Honey
  • 1/2  tsp Salt
  • 1/4 tsp Pepper
  • 1 tsp Thyme, Fresh, chopped
  • 2 tsp Rosemary, Fresh, chopped

Method of Preparation

Step 1

Lay the bacon on a sheet tray and put in a cold oven.

 

Turn the oven on to 400 degrees F. Cook for 9 minutes.

 

Transfer bacon to a paper towel lined plate to cool slightly.

Step 2

Mix the chopped cranberries with the stilton cheese.

Step 3

Stuff each date with the cheese evenly.

 

Sprinkle with salt.

Step 4

Wrap each date with the sliced, warmed bacon. Place on a sheet tray lined with parchment paper, seam side down.

 

Bake for 12-15 minutes or until the bacon is crispy.

 

Transfer to a paper towel lined plate once done cooking for a few minutes.

Prepare the honey-herb glaze by mixing together the honey, herbs, salt and pepper.
