Ingredients
- 8 oz Bacon (8 slices), cut in half
- 4 oz Stilton Cranberry Cheese
- 2 oz Cranberries, Dried, chopped
- 16 each Dates, sliced (NOT in half completely), pit removed
- 3 tbsp Honey
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 tsp Thyme, Fresh, chopped
- 2 tsp Rosemary, Fresh, chopped
Method of Preparation
Step 1
Lay the bacon on a sheet tray and put in a cold oven.
Turn the oven on to 400 degrees F. Cook for 9 minutes.
Transfer bacon to a paper towel lined plate to cool slightly.
Step 2
Mix the chopped cranberries with the stilton cheese.
Step 3
Stuff each date with the cheese evenly.
Sprinkle with salt.
Step 4
Wrap each date with the sliced, warmed bacon. Place on a sheet tray lined with parchment paper, seam side down.
Bake for 12-15 minutes or until the bacon is crispy.
Transfer to a paper towel lined plate once done cooking for a few minutes.
Step 5
Prepare the honey-herb glaze by mixing together the honey, herbs, salt and pepper.
Step 6
Serve the dates warm and drizzled with the honey-herb glaze.
