Ingredients

  • 1 ½ cup Shredded Carrots
  • 3/4  cup Unsweetened Shredded Coconut
  • 1 cup Unsalted Walnuts
  • 12 Pitted Dates
  • ¼ cup Dave's Almond Butter
  • 1 tsp Vanilla Extract
  • 1 ½ tsp Ground Cinnamon
  • ½ tsp Ground Ginger
  • ¼ tsp Ground Nutmeg
  • ¼ tsp Ground Cloves
  • ¼ tsp Sea Salt
  • ½ cup Unsweetened Shredded Coconut, For Garnish

Method of Preparation

No Bake Carrot Bites - Step 1

Step 1

Add shredded carrots to a food processor. Pulse until finely grated.

Step 2

Add remaining ingredients to the food processor. Pulse until well blended, scraping the sides to incorporate.

Form into balls, about 1 tbsp each.

Roll in additional unsweetened coconut. Place on a parchment lined sheet pan. 

 

Refrigerate for at least 20 minutes. Enjoy!
