- 1 ½ cup Shredded Carrots
- 3/4 cup Unsweetened Shredded Coconut
- 1 cup Unsalted Walnuts
- 12 Pitted Dates
- ¼ cup Dave's Almond Butter
- 1 tsp Vanilla Extract
- 1 ½ tsp Ground Cinnamon
- ½ tsp Ground Ginger
- ¼ tsp Ground Nutmeg
- ¼ tsp Ground Cloves
- ¼ tsp Sea Salt
- ½ cup Unsweetened Shredded Coconut, For Garnish
Method of Preparation
Add shredded carrots to a food processor. Pulse until finely grated.
Add remaining ingredients to the food processor. Pulse until well blended, scraping the sides to incorporate.
Form into balls, about 1 tbsp each.
Roll in additional unsweetened coconut. Place on a parchment lined sheet pan.
Refrigerate for at least 20 minutes. Enjoy!
