Method of Preparation
Preheat oven to 400°F.
Heat olive oil in a pan over medium heat. Add garlic, onions, and carrots.
Mix in spices. Cook for about 3-4 minutes.
Add tomato paste, coconut aminos and balsamic vinegar. Mix well.
Add cooked lentils, corn, peas and vegetable stock.
Bring to a boil and simmer for 6-7 minutes.
Spoon mixture into casserole dish.
Top with mashed potatoes.
Bake for 15 minutes.
Then broil until the mashed potatoes begin to turn golden brown.
