Method of Preparation
Preheat oven to 425°F. Line baking sheet with parchment paper.
Slice zucchini into small pieces, pat dry.
Mix almond flour and Parmesan cheese in a dish. Set aside.
Crack eggs in a separate bowl. Add garlic powder and Italian spice blend to bowl and mix.
Dip zucchini pieces in egg wash, then roll in cheese/almond flour.
Line on baking sheet.
Bake for approximately 15 minutes, flip and continue cooking until edges are crispy.
While fries are cooking, add greek yogurt to a bowl. Add lemon juice, minced garlic, parsley, salt/pepper and mix.
Serve Zucchini Fries with Aioli! Enjoy!
