Ingredients
- 1 1/2 cups Vegetable Broth
- 1 tbsp Olive Oil
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 1/2 cups Couscous (Moroccan Style), Dry
- 1/4 cup Pine Nuts & Slivered Almonds, toasted
- 1/2 cup (6 each) Pitted Dates, chopped
- 1/2 cup Craisins, chopped
- 1/3 cup Feta Cheese, crumbled
- 1 tbsp Parsley, fresh, chopped
- 1/3 cup Panera Balsamic Dressing
Method of Preparation
Step 1
In a pot bring broth, oil, salt and pepper to a boil.
Step 2
Turn off the heat, stir in the couscous, cover and let stand for 10 minutes.
Step 3
After 10 minutes, fluff with a fork.
Step 4
Add couscous to a serving bowl.
Top with half of the toasted nuts, dates, craisins, feta, parsley, and vinaigrette. Lightly toss.
Step 5
Garnish the top with the remaining ingredients and enjoy!
