Ingredients
- 1 package Chicken Tenders
- 1 Red Onion, diced
- 1 Broccoli Crown, bite-sized pieces
- 10 oz package Shredded Brussels Sprouts
- 2 pints Grape Tomatoes
- Marinade: ---
- 1/4 cup Olive Oil
- 2 tbsp Lemon Juice
- 2 tsp Lemon Pepper
- 1 tsp Garlic Powder / Onion Powder
- 1/4 tsp Paprika
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 3 tbsp Grated Parmesan Cheese
- Garnish: Parmesan Cheese / Parsley
Method of Preparation
Step 1
Preheat the oven to 425°F. Spray two sheet pans with pan spray.
Step 2
Mix together the marinade and set aside.
Step 3
Add the vegetables, chicken tenders, and marinade to a bowl. Toss to coat evenly.
Step 4
Lay out on the two sheet pans.
Bake for 20-25 minutes or until the chicken reaches 165°F.
Step 5
Garnish with grated parmesan cheese and parsley!
