Our seafood of choice is scallops and shrimp, but this would work with really any kind you want, like clams, mussels, lobster, or crab. We like how the scallops and shrimp cook for the same amount of time. The sauce is perfectly simply and creamy with a mixture of milk, chicken broth (sub veg if you don't eat meat), and Parmesan. No roux necessary, just a light cream sauce that doesn't overpower the seafood.
