Sweet Potato and Sausage Quinoa Bake

We tend to keep our lunches and dinners a “one dish meal” and by that I mean we cook a few different things, mix it all together, and hope it lasts for a few days before we have to cook again. I love the flavor combinations of this Sweet Potato and Sausage Quinoa Bake (the gruyere cheese is so good) and how easy it is to make.

For these fluffy pancakes I made my own pumpkin puree, which is incredibly easy to make. Once you’ve made that, or if your anything like me, you probably already have a whole stash of Pumpkin Puree in your fridge for whenever the pumpkin urge calls, you then simply mix all the wet ingredients together. Then mix all the dry ingredients together and then combine the wet and dry ingredients. And that’s it folks. There you have it, Fluffy Pumpkin Pancakes!

This kale salad is everything you want in a fall salad. It’s gorgeous (those colors!), a delicious blend of creamy squash, crisp apple and crunchy nuts and packed with flavor.

Herb Crusted Salmon with Green Beans and Cherry Tomatoes

I topped the salmon filets with an homemade herb mixture of minced garlic, chopped parsley, thyme, oregano, basil, a little rosemary and olive oil from my herb garden (check out our easy indoor herb garden tutorial). I then added fresh, farmers market green beans and heirloom cherry tomatoes onto the sheet with the salmon filets.  You can, of course, include any of your favorite seasonal vegetables here; I like to use whatever I’ve picked up in my farmers market haul from the weekend before.

I whipped up this easy cinnamon apple bread last weekend to prepare for the momentous occasion of college football starting back up and wanted to share it with you today.  This bread is ah-mazingly delicious (I know I made that word up but believe me, it warrants it’s own made up superlatives!)
